Palkova or milk Halwa

Ingredients:
milk - 1/2 liter
sugar - 4 tbsp
lemon juice - 1/2 tsp
Ghee - 2 tsp

Recipe:

1. Heat the milk in a heavy bottom skillet.
2. When it starts boiling reduce the heat and let the water content evaporate from milk. This process may take some 1.5 hrs to 2 hrs.
3. stir the milk every 10 minutes to prevent it burning at the bottom of the vessel.
4. when it is reduced to the halwa consistency add sugar and lemon juice and keep stirring. Don't stop stirring at this stage as it may stick to the bottom and burn.
5. When it's fully reduced add 2 tsp of ghee and stir for 2 minutes and remove from heat.
6. Now your delicious palkova is ready.

Cauliflower gravy

Ingredients:

Cauliflower - 1 bowl
urid dal-1 tsp
ginger garlic paste - 1 tsp
onion - 1/2 cup diced
Tomato - 1/2 cup diced
coconut - 6 medium sliced pieces
fried gram dal -2 tbsp
garam masala powder - 1 tsp
turmeric powder - 1/4 tsp
chilli powder- 1/4 tsp
salt -3/4 tsp or as per taste

Recipe:

1. soak the cauliflower in hot boiling water for 10 minutes.
2. In a skillet heat 2 tsp oil and fry onions till golden brown.
3. Add the ginger garlic paste to the onions and fry for 20 seconds.
4. Add tomato, cauliflower, turmeric powder, chilli powder and salt and cook it covered till the cauliflower is tender.
5. Dry roast the urid dal in a skillet.
6. Grind the roasted urid dal, fried gram dal and coconut with small amount of water to make fine paste.
7. Add this paste and garam masala to the cauliflower.
8. Add desired amount of water to bring it to a gravy form.
9. cook this for about 5 to 7 minutes and serve hot with chapathi.

Rava dosa

Ingredients:

Rava (samolina)- 1 cup
Rice Flour - 1 cup
Maida (All Purpose Flour) - 1/2 cup
cumin seeds (Jeera) - 1 tbsp
pepper - 1 tsp
ginger - 1 tsp (finely chopped)
green chilli - 2 (finely chopped)
salt - 1 tsp or as per taste
oil

Recipe:

1. Mix all the ingredients with water. The batter should be in thin butter milk consistency.
2. sprinkle this batter over heated pan. (Make sure the pan is heated properly to get the rava dosa texture)
3. pour 1 or 2 tsp oil over the dosa. Turn the dosa when it becomes golden brown.

Tip: Finely chopped onions can be added to this batter to prepare onion rava dosa

Sathu Maavu

Ingredients:

Boiled rice - 1 cup
Jowar - 1 cup
Ragi - 1 cup
Millet - 1 cup
wheat - 1 cup
Fried gram Dal - 1 cup

Recipe:

1. Dry roast all the ingredients separately and make fine powder.
2. Transfer the powder to an air tight container.
3. Mix 1 tbsp of this powder with milk without lumps and boil. The mixture will become thick.
4. Add salt or sugar as per taste.

Note: If you want to add more nutrition, sprout the grains, dry in shadow, dry roast them and then prepare the powder.

Vathal kuzambu Recipe

Ingredients: (serving for 4 people)

Sundakai vathal - 1 tbsp
Urid dal - 1 tsp
dry red chilli -2
grated coconut - 1/4 cup
pepper - 1 tbsp
kulambu maavu - 1 1/2 tbsp
tamarind paste - 1 tsp
salt - 1 tsp
asafoetida - 1/4 tsp
Gingly oil - 4 tbsp

Recipe:

1. Dry roast pepper, chilli, coconut and urid dal in a skillet.
2. Grind the dry roasted ingredients with salt and small amount of water to make fine paste.
3. Heat the oil in a skillet and fry the vathal. Add the dry roasted ingredients paste to this fry.
4. Mix the kulambu maavu and tamarind paste to 500 ml of water and add this mixture to the vathal fry.
5. Boil till the mixture becomes thick and oil separates from the gravy.
6. Serve with hot rice, ghee and appalam.
